Practicum - Rebecca
I was given Special Interest communities for the practicum assignment and chose the topic of Cooking. I've chosen three websites to contribute to - Vegetariantimes.com, cookingwithfriendsclub.com, and the Facebook community page Vegetarian Cooking. I've always wanted to do more home cooking and improve my skills but haven't made the time - so I figured this assignment was the perfect chance. I have hardly looked up recipes before unless it was for a specific dish that I needed an ingredient list or cooking time for etc. So far I have made two things a couple of times (trial and error) which the websites have helped with - idea wise and improving/troubleshooting a dish. Las week I made Quinoa-stuffed peppers which were delicious, though a little bland, I added habanero peppers to them and advised this to the Vegetariantimes.com discussion board. Other's thought this idea was a good one and it proved to be a tasty additive for me. I also tried making Crispy Kale Leaves, which after about five tries were a success. I had to keep going back and looking at the discussion board to get tips on why they were burning or soggy etc. I also added garlic salt to them which wasn't in the recipe but no one has commented on that...maybe it was an amateur move? I've been scanning the pages for recipes to try and comment on this week - Zucchini bread and chinese are possibilities. I've commented on these two at cookingwithfriends and the facebook group, to get a feel for how successful I might be at them. I've found out from the experts that posted them that I don't really have the right utensils for making either, but plan on compromising (as a college student must) and posting the substitutions I use. So far the most beneficial thing about participating in the blog and discussion boards is being able to read about other people's mishaps and suggestions to make dishes better, and then redoing it or trying it myself.
